Scientists sent beans into orbit and made 'space miso.' Here's how it tasted

  • but astronauts wanting use the fermented soybean staple in space one day might have to get used to a difference in taste.

Scientists from the Japan Aerospace Exploration Agency (JAXA) and the Research Institute of Environment, Agriculture and Fisheries of Osaka Prefecture sent soybeans into space aboard the Kibo module of the International Space Station to study the effects of microgravity on plant growth. After the beans were returned to Earth, they were used to make miso, a traditional Japanese seasoning. The space-grown miso was described as having a richer aroma and a more complex flavor compared to Earth-grown miso, attributed to the unique conditions of space affecting the soybeans' development. This experiment not only advances our understanding of agriculture in space but also highlights potential improvements in food production techniques on Earth.
